Welcome to the ACF Chef de Cuisine Society of Oregon, Inc

ACF Chefs de Cuisine Society of Oregon, Inc., is a non-profit chapter of the American Culinary Federation, established in 1950.  Membership is made up of chefs, purveyors and students dedicated to the profession of food preparation, hospitality, fine dining, competition and certification.  Goals and objectives are achieved through community projects, volunteerism and reaching out to all those connected with the food industry.

Six Student Teams Compete in Western Region "Jeopardy"-Style Culinary Competition in Nevada, March 12
For culinary students hoping to one day earn the title of “chef” and survive in the professional kitchen, it’s important to have fundamental cooking skills, but possessing culinary knowledge—from culinary math to sanitation—is also key. Six teams from several colleges in the West will put their brainpower to the test March 12 in the American Culinary Federation’s (ACF) Western Region Baron H. Galand Culinary Knowledge Bowl. The competition, sponsored by American Technical Publishers, takes place during ACF’s Western Regional Conference at John Ascuaga’s Nugget Hotel Resort, Sparks, Nev., March 12–14.

Culinary Students Compete for Western Region Award in Nevada in March
How quickly can you fabricate a fish and two whole chickens? Could you prepare the classical French dish suprême de volaille a l’ecarlate under the watchful eye of professional chefs? That’s just what eight teams of culinary students will do during the American Culinary Federation’s (ACF) Western Region Student Team Championship. The competition, sponsored by R.L. Schreiber, Inc., takes place at Truckee Meadows Community College, Reno, Nev., during the 2012 ACF Western Regional Conference, held March 12–14 at John Ascuaga’s Nugget Hotel Resort, Sparks, Nev. The winning team will advance to the national competition in Orlando, Fla., in July.

    Portland, Oregon - The 52nd Annual ACF Chef of the Year Awards Dinner was held at Northwest Culinary Institute on October 16th, 2011.
